Can we get any more eager for spring? Over the last few days, this has been our staple breakfast – especially during lazy, chilled out weekends. What’s an acai bowl? It’s basically a scrumptious smoothie you spoon out of a bowl (yum?!), topped with granola, fruits and in our case, coconut shavings and honey. One of the hardest things for us about going plant-based is giving up the yoghurt. I, personally, use to devour tiny tubs of those like it was air! I was a lid-licker! That said, this has fulfilled my cravings 110%. When you mix the bananas in with the almond or rice milk, it creates a super nice, thick texture – enough to satisfy those cheeky yoghurt cravings. Then the frozen berries kick it all into gear, saturating the creamy blend with all that fresh fruitiness and zing we love. Enjoy!
What you need:
- 2 cups frozen berry mix
- 1 banana
- 2 tbsp acai powder
- 1 cup almond/rice milk (in our experience, this goes the best)
How to make:
- Blend the frozen berry mix, 1 of the bananas, the acai powder and almond/rice milk in a blender (we use a nutribullet and it just about fills it to the limit (680ml tall cup). The longer you leave it the more runny it gets, so blend for less time to keep it nice and thick.
- Chop up the fresh banana and strawberries on the side.
- Pour the cold berry mixture into a breakfast bowl, then top with a generous sprinkle of granola, fresh strawberries, banana, blueberries, coconut shavings.
Note: if you have flax seeds, throw those in as well. They’re good for you – lots of Omega 3 “healthy fats”, antioxidants and fiber. Plus their nuttiness goes well with the granola. Boom!
